Lunch- Patacones

Patacones are basically fried plantains and are served as a side dish with most meals in Costa Rica, But they can be a delicious snack on their own. Plantains can be found in most grocery stores, they look similar to bananas but are much thicker and fibrous. Depending on where travel,  they can have different names, in Cuba, these savory snacks are known as tacones. These are wonderful served with beans, salsas, crema, or ceviche.

Ingredients

  • 2 green plantains
  • 1 cup of vegetable oil
  • 1 pinch salt, to taste

Directions

Step 1: Peel plantains and slice into two inch rounds.

Step 2: Heat oil until it is bubbling .

Step 3: Place plantains into hot oil carefully and let cook for about one-two minutes on each side. They should be a nice golden brown color

Step 4: Carefully remove the Patacones from the oil, laying them on paper towels or something to absorb the liquid.  Let them cool for a few minutes.

Step 5: Smash the Patacones. If you own a wooden tortilla press then this is the perfect tool. However, this could be done with a meat hammer as well.

Step 6: Add the smashed Patacones back to the oil for half a minute on each side to crisp them up.

Step 7: Carefully remove and let the oil drain on a paper towel, you might want to press on them slightly.

Step 8: Sprinkle with salt and serve.
